Fifteen Minute Jalapeno Garlic Shrimp

This is one of the fastest, easiest recipes I know. These shrimp are spicy, garlicky, and a little bit smokey and the best part is they only take fifteen minutes to make! They're so versatile, too! You can serve them up in tacos, alone as an appetizer, or as a main course with your choice of sides.

Start by mincing one jalapeno and three cloves of garlic. If you like spice, leave the seeds and pith in the jalapeno. Otherwise, leave them out. Combine the minced garlic and jalapeno in a bowl with two tablespoons of olive oil, two teaspoons of adobo (the sauce that canned chipotle peppers are packed in), a half teaspoon of pepper, and a half teaspoon of chili powder.

Peel and de-vein a pound of extra large shrimp.

Combine the shrimp with the jalapeno garlic mixture. If you're not in a rush, you can let the shrimp marinate up to a half hour. If you're perpetually hungry like me, stir in a half teaspoon of salt, move the rack to the highest shelf of the oven, and preheat your oven's broiler to high heat.

Spread the shrimp on a baking sheet and broil for 7 minutes, until they are cooked through and opaque. Serve them up any way you like!

 

Recipe:

Total time: 15 minutes | Serves: 2 as a meal, 4 as an appetizer

1 pound peeled, de-veined extra large shrimp

1 jalapeno, minced (seeds left in if you like it spicy, removed if not)

3 cloves garlic, finely minced

2 tablespoons olive oil

1/2 teaspoon black pepper

1/2 teaspoon chili powder

1/2 teaspoon salt

1. Place the oven rack on the highest shelf in the oven and preheat the broiler to high.

2. Combine all ingredients in a bowl.**

3. Spread the shrimp and spice mixture on a baking sheet, and broil for 7 minutes until the shrimp are cooked through.

**if you want to prep this ahead of time, combine everything in a bowl except for the salt. Only add the salt right before cooking. The shrimp can be marinated with the other ingredients up to 30 minutes in advance.
