Cod Filets with Lemon & Miyoko’s Butter Sauce
My favorite local grocer, Randall’s Farm, just started carrying my favorite vegan dairy brand - Miyoko’s. Talk about a win-win for me! I have a hard time finding Miyoko’s delicious cultured European style butter elsewhere, so I was so happy to find they have lots of it in stock.
This is an incredibly quick and simple dinner that is absolutely delicious. I love how Miyoko’s butter browns just like traditional dairy butter, and it made the bright lemon sauce so much more luscious over the delicate cod.
Recipe:
(serves 2)
4 cod filets (3/4-1lb total)
kosher salt and black pepper
1/3 cup all purpose flour
4 tbs Miyoko’s vegan butter
2 lemons, zested and juiced
Season the cod filets lightly on both sides with salt and pepper.
Lightly coat each filet with flour.
Heat the butter in a skillet over high heat.
Sauté the filets for about 2 minutes per side until they are cooked and lightly golden (depending on the size of your pan, you may have to do this in batches).
Remove the filets from the pan and set aside.
Add the lemon zest and juice to the pan and stir to make a sauce. Simmer for just a minute to allow everything to come together. Add a touch of salt and pepper to the sauce if needed.
Pour the sauce over the filets and serve.
